Double Chocolate Banana Layer Cake – moist, rich, and bursting with flavor!

Ingredients:

For the Banana Cake Layers: 2 cups all-purpose flour

1/2 cup brown sugar
2 large eggs
1/2 cup sour cream
1/4 cup whole milk
1 teaspoon vanilla extract
3 ripe bananas, mashed
For the Chocolate Cake Layers: 1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup granulated sugar
1/2 cup brown sugar
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
1/2 cup hot coffee or hot water
For the Chocolate Banana Filling: 2 ripe bananas, sliced thin
1/2 cup mini chocolate chips
1/2 cup chocolate ganache or thick chocolate syrup
For the Chocolate Frosting: 1 cup unsalted butter, softened
3 cups powdered sugar
3/4 cup cocoa powder
1/2 teaspoon salt
1/3 cup heavy cream (plus more if needed)
1 teaspoon vanilla extract

Instructions:

Preheat the oven to 350°F (175°C). Grease and line four 8-inch cake pans (two for banana and two for chocolate layers).
To make the banana cake layers:
In a medium bowl, whisk together flour, baking soda, and salt.
In a large bowl, beat butter with granulated and brown sugar until creamy.
Add eggs one at a time, then mix in sour cream, milk, vanilla, and mashed bananas.
Gradually mix in the dry ingredients. Divide into two prepared pans. Bake for 25–30 minutes. Cool completely.
To make the chocolate cake layers:
Sift together flour, cocoa powder, baking powder, baking soda, and salt.
In a separate bowl, whisk sugars, oil, eggs, and vanilla. Mix in buttermilk, then hot coffee.
Gradually mix in the dry ingredients until smooth. Divide into pans and bake for 25–30 minutes. Cool completely.
To make the frosting:
Beat butter until creamy. Sift in powdered sugar and cocoa powder. Add salt, then vanilla and cream. Beat until fluffy. Adjust with more cream if needed.
To assemble the cake:
Place one chocolate cake layer on your serving plate. Spread a thin layer of frosting. Add banana slices and a drizzle of chocolate ganache.
Top with a banana cake layer. Repeat layering, alternating cakes and filling.
Frost the entire cake with the chocolate frosting using a spatula to smooth the edges and top.

Decoration Tips:

Use a small offset spatula to create soft swirls on top of the cake with the frosting.
Add chocolate curls or shaved chocolate on top for an elegant finish.
Press mini chocolate chips around the base or on top to match the interior layers.
Garnish with fresh banana slices just before serving (to prevent browning, brush them with a little lemon juice).
If making in advance, store covered in the refrigerator and let it come to room temperature before serving.
