Beef and Potato Boats

Ingredients:

4 large baking potatoes
1 lb ground beef
1 small onion, chopped
1/2 cup ketchup
2 tablespoons Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1 cup shredded cheddar cheese
Fresh parsley, chopped, for garnish (optional)
Directions:

Preheat your oven to 400°F (200°C). Pierce the baking potatoes with a fork and place them directly on the oven rack. Bake for 50-60 minutes, or until tender when pierced with a fork.
While the potatoes are baking, in a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is softened. Drain any excess grease.
Stir in the ketchup, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Cook for an additional 5 minutes, stirring occasionally.
Once the potatoes are cooked, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out the flesh, leaving a thin shell.
Mash the potato flesh with a fork and stir it into the beef mixture.
Spoon the beef and potato mixture evenly into the potato shells.
Sprinkle shredded cheddar cheese over the top of each potato boat.
Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Garnish with chopped fresh parsley if desired before serving.
