Hot Honey Halloumi and Mint Tacos
These delicious vegetarian tacos combine sweet, spicy, and savory halloumi with fresh avocado, arugula, and mint yogurt for a flavor-packed meal. 250g Halloumi
8 Mini tortillas
2 Avocados
60g Arugula (rocket)
50g Pomegranate seeds
1 heaped teaspoon Harissa
2 tbsp Honey
1 tsp Red pepper flakes
ΒΌ cup Greek yogurt (60ml)
10g Mint, chopped
Directions:
1. Slice each avocado in half, remove the pit, and scoop the flesh into a plate. Mash it with a fork.
2. Prepare mint yogurt by combining Greek yogurt and chopped mint leaves.
3. Thinly slice the halloumi.
4. Mix harissa, honey, and red pepper flakes in a bowl. Add halloumi slices and coat them well.
5. Heat a frying pan over medium heat and fry the halloumi for 3-4 minutes on each side until golden brown.
6. Toast the tortillas in a dry pan or grill pan.
7. Assemble tacos by adding mashed avocado, arugula, halloumi, mint yogurt, and pomegranate seeds.
