Garlic Butter Tortellini with Creamy Cajun Chicken Bites
Ingredients:
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
2 teaspoons Cajun seasoning
1/2 teaspoon smoked paprika
Salt and pepper to taste
1 tablespoon olive oil
1 tablespoon butter (for searing chicken)
4 cloves garlic, minced
1 (20 oz) package refrigerated cheese tortellini
2 tablespoons butter (for sauce)
1 cup heavy cream
1/2 cup chicken broth
3/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1 tablespoon chopped parsley (for garnish)
Directions:
Toss chicken pieces with Cajun seasoning, smoked paprika, salt, and pepper. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high. Add chicken and sear until golden brown and cooked through, about 5–7 minutes. Remove and set aside.
In a large pot, cook cheese tortellini according to package instructions. Drain and set aside.
In the same skillet, melt 2 tablespoons butter. Add minced garlic and cook for 1 minute until fragrant. Stir in heavy cream and chicken broth. Bring to a gentle simmer.
Whisk in Parmesan cheese, garlic powder, and onion powder. Simmer until the sauce thickens slightly, 2–3 minutes.
Add the cooked tortellini and Cajun chicken bites back to the skillet. Toss gently until well coated in the creamy garlic butter sauce.
Garnish with chopped parsley and an extra sprinkle of Parmesan if desired. Serve warm and enjoy every bite!
