🍓 Caramel Crunch Cheesecake Fruit Salad 🥄
Ingredients
2 cups diced fresh strawberries
2 cups diced fresh pineapple
2 cups green grapes, halved
1 cup blueberries
1 (8 oz) package cream cheese, softened
½ cup powdered sugar
1 teaspoon vanilla extract
1 cup whipped topping (such as Cool Whip), thawed
1 (1.5 oz) package caramel bits or drizzle sauce
1 cup granola or crushed graham crackers (for crunch)
Instructions
Begin by preparing the fruit. Wash, dry, and dice the strawberries and pineapple into bite-sized pieces. Halve the grapes and rinse the blueberries. Combine all the fruit in a large mixing bowl and set aside.
In a separate bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract, mixing until fully combined. Gently fold in the whipped topping to create a light and fluffy cheesecake-inspired dressing.
Pour the cream cheese mixture over the fruit and toss gently to coat. Be careful not to crush the softer fruits like strawberries and blueberries.
Just before serving, drizzle caramel sauce or sprinkle caramel bits generously over the top of the fruit salad. Sprinkle the granola or crushed graham crackers evenly for a satisfying crunch.
Serve immediately, or chill in the refrigerator for up to an hour before serving to allow the flavors to meld. Stir gently before serving if any caramel or granola has settled.
