Banana Bread Cinnamon Rolls
Ingredients:
For the Dough:
1 cup warm milk (110°F)
2¼ teaspoons active dry yeast (1 packet)
2 tablespoons granulated sugar
2 ripe bananas, mashed
1/4 cup melted butter
1 egg
1/2 teaspoon salt
4 cups all-purpose flour
For the Filling:
1/2 cup brown sugar
2 teaspoons ground cinnamon
1/4 cup softened butter
For the Cream Cheese Icing:
4 oz cream cheese, softened
2 tablespoons butter, softened
1 cup powdered sugar
1/2 teaspoon vanilla extract
1–2 tablespoons milk (to thin as needed)
Directions:
In a large mixing bowl, combine warm milk, yeast, and sugar. Let sit for 5–10 minutes until foamy.
Add mashed bananas, melted butter, egg, and salt. Mix well.
Gradually add flour, 1 cup at a time, mixing until a soft dough forms. Knead for 6–8 minutes until smooth and elastic.
Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
Punch down the dough and roll out on a floured surface into a large rectangle (about 16x12 inches).
Spread softened butter over the dough. Sprinkle with brown sugar and cinnamon evenly.
Roll the dough tightly from the long side and cut into 12 equal rolls.
Place rolls in a greased 9x13 baking dish. Cover and let rise for 30–45 minutes.
Preheat oven to 350°F (175°C). Bake rolls for 25–30 minutes or until golden brown.
While baking, mix icing ingredients until smooth. Spread over warm rolls before serving.
