Orange Crush Pound Cake
Ingredients
For the cake:
1 cup (2 sticks) unsalted butter, softened
½ cup vegetable shortening (or replace with more butter)
3 cups granulated sugar
5 large eggs, room temp
3 cups all-purpose flour
½ tsp baking powder
½ tsp salt
1 cup Orange Crush soda (or another orange soda)
1 tsp vanilla extract
1 tsp orange extract (optional, for stronger flavor)
Zest of 1 large orange
For the glaze:
2 cups powdered sugar
3–4 tbsp Orange Crush soda (enough to make a pourable glaze)
1 tsp orange zest (optional)
Instructions
Preheat oven: 325°F (165°C). Grease and flour a 10-inch Bundt pan.
Cream butter & sugar: In a large mixing bowl, beat butter, shortening, and sugar until light and fluffy (about 4–5 minutes).
Add eggs: Beat in eggs one at a time until fully incorporated.
Mix dry ingredients: In a separate bowl, whisk flour, baking powder, and salt.
Combine: Add dry ingredients to the creamed mixture alternately with Orange Crush soda, beginning and ending with flour. Stir in vanilla, orange extract, and orange zest.
Bake: Pour batter into prepared pan and bake 60–70 minutes, until a toothpick inserted comes out clean. Let cool 15 minutes in pan, then invert onto a wire rack to cool completely.
Glaze: Whisk powdered sugar with Orange Crush soda until smooth. Drizzle over cooled cake and sprinkle with orange zest if desired.
