🍰 Super Moist Fruit Cake Recipe
🧁 Ingredients:
• 2 cups (250g) all-purpose flour
• 1 tsp baking powder
• ½ tsp baking soda
• ¼ tsp salt
• 1 cup (200g) brown sugar
• ½ cup (120ml) vegetable oil or melted butter
• 3 large eggs
• 1 tsp vanilla extract
• 1 cup (240ml) buttermilk or plain yogurt
• 1 ½ cups mixed dried fruits (raisins, chopped dates, dried apricots, cherries)
• ½ cup chopped nuts (walnuts, pecans, almonds)
• Zest of 1 orange and 1 lemon
• 2 tbsp brandy or orange juice (optional, for soaking)
👩🍳 Instructions:
1 Preheat oven to 160°C (320°F). Grease and line a 9-inch round or loaf pan.
2 In a bowl, sift together flour, baking powder, baking soda, salt. Set aside.
3 In a large bowl, beat brown sugar and oil until well combined.
4 Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
5 Gradually add dry ingredients alternating with buttermilk/yogurt, mixing until just combined.
6 Fold in dried fruits, nuts, and citrus zest gently.
7 Pour batter into the prepared pan, smooth the top.
8 Bake for 60–75 minutes or until a toothpick comes out clean.
9 Optional: While still warm, poke holes in the cake and brush with brandy or orange juice to add moisture and flavor.
10 Let cool completely before slicing.
