Crispy Chicken with Creamy Pasta 🍝🍗🧀
Ingredients:
For the Crispy Chicken:
- 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil (for frying)
For the Creamy Pasta:
- 12 oz fettuccine or penne pasta
- 2 tablespoons unsalted butter
- 3 garlic cloves, minced
- 1 1/2 cups heavy cream
- 1 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Directions:
For the Crispy Chicken:
1. Season the chicken breasts with salt and pepper. Dredge each chicken breast in flour, dip in beaten eggs, then coat in a mixture of panko breadcrumbs, Parmesan cheese, garlic powder, and paprika.
2. Heat olive oil in a large skillet over medium heat. Fry the chicken for 4-5 minutes per side, or until golden brown and fully cooked. Remove from heat and set aside.
For the Creamy Pasta:
1. Cook the pasta according to package instructions until al dente. Drain and set aside.
2. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
3. Stir in the heavy cream and bring to a simmer. Gradually whisk in the Parmesan cheese and garlic powder, cooking for 3-4 minutes until the sauce thickens. Season with salt and pepper to taste.
4. Toss the cooked pasta in the creamy sauce until fully coated.
To Serve:
1. Slice the crispy chicken and serve it over the creamy pasta. Garnish with freshly chopped parsley and additional Parmesan if desired.
