Cranberry Pecan Goat Cheese Truffles
Ingredients:
10 oz goat cheese
6 oz cream cheese
2 teaspoons cinnamon
3 tablespoons honey (plus extra for garnish)
1 ½ cups pecan chips, divided
1 cup diced dried cranberries
½ cup minced fresh parsley
Directions:
In a large mixing bowl, beat together the goat cheese, cream cheese, cinnamon, and honey until the mixture is light and fluffy. Fold in 1/2 cup of the pecan chips until combined. Set aside.
Lay out a sheet of parchment paper on your countertop. In the center, mix together the remaining pecan chips, diced cranberries, and minced parsley.
Using a large cookie scoop, form balls of the cheese mixture. Roll each ball in the cranberry-pecan-parsley mixture until fully coated.
Continue this process until all the cheese truffles are formed and coated.
Refrigerate the cheese truffles until ready to serve. These can be made up to three days ahead of time and stored in an airtight container in the refrigerator.
To serve, drizzle the truffles with honey, if desired. Serve them with crackers, warm crostini, or as bite-sized appetizers with toothpicks or pretzel sticks.
