Creamy Butternut Squash Gnocchi with Sausage
Ingredients:
1 pound store-bought gnocchi
1 tablespoon olive oil
1 pound Italian sausage, casings removed
2 cups butternut squash puree
1/2 cup chicken broth
1/2 cup heavy cream
1/4 teaspoon ground nutmeg
Salt and pepper, to taste
1/4 cup grated Parmesan cheese
Fresh parsley, for garnish
Directions:
Cook the gnocchi according to the package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the sausage and cook, breaking it apart with a spoon, until browned and fully cooked, about 7-10 minutes.
Remove the sausage from the skillet and set aside. In the same skillet, add the butternut squash puree, chicken broth, heavy cream, and nutmeg. Stir to combine and bring to a simmer.
Season the sauce with salt and pepper to taste, and let it cook for 5-7 minutes until it thickens slightly.
Add the cooked sausage and gnocchi back into the skillet, stirring to coat everything in the creamy butternut squash sauce.
Sprinkle Parmesan cheese over the top and garnish with fresh parsley before serving.
