Ingredients:

For the Beef Rendang:
2 lbs beef chuck, cut into small cubes
2 cans coconut milk
1 stalk lemongrass, bruised
4 kaffir lime leaves
1 cinnamon stick
3 cloves
3 star anise
1 tablespoon tamarind paste
2 tablespoons brown sugar
Salt to taste

Rendang Spice Paste:
5 shallots, peeled
5 cloves garlic, peeled
2-inch piece of ginger, peeled
2-inch piece of galangal, peeled
4 dried chilies, soaked in hot water and seeded
1 teaspoon turmeric powder

For the Sliders:
12 slider buns
1 cup shredded mozzarella cheese (optional)
Fried shallots, for garnish
Chopped green onions, for garnish
Sesame seeds, for garnish

Instructions:

Prepare the Rendang Paste:
Blend the shallots, garlic, ginger, galangal, chilies, and turmeric powder in a food processor until it forms a smooth paste.
Cook the Beef Rendang:
In a large pot, combine the beef, spice paste, coconut milk, lemongrass, kaffir lime leaves, cinnamon stick, cloves, star anise, tamarind paste, and brown sugar.
Bring to a boil, then reduce the heat to low and simmer uncovered for 2-3 hours, or until the beef is tender and the sauce has thickened.

Assemble the Sliders:
Toast the slider buns and place a generous amount of beef rendang on the bottom halves.
If using, top with shredded mozzarella cheese and melt under a broiler for a minute or two.
Garnish with fried shallots, chopped green onions, and a sprinkle of sesame seeds.

Serve:
Place the top half of the slider buns on and secure with a skewer if needed.
Serve warm with your favorite sides.
