Shrimp Grilled Cheese with Garlic Bread and Monterey Jack Cheese

Ingredients:

- 8 ounces of cooked shrimp, chopped
- 2 slices of your favorite bread
- 1 cup of Monterey Jack cheese, shredded
- 1 tablespoon butter
- 2 garlic cloves, minced
- 1 tablespoon parsley, chopped
- Salt and pepper to taste

Instructions:

1. Start by preheating your skillet over medium heat.
2. In a small bowl, mix the butter with minced garlic and half of the chopped parsley. Spread this mixture evenly on one side of each slice of bread.
3. On the unbuttered side of one slice, layer half of the Monterey Jack cheese, then add the chopped shrimp, and top with the remaining cheese.
4. Place the second slice of bread on top, buttered side up.
5. Carefully place the sandwich in the skillet and cook until the bottom is golden and the cheese starts to melt, about 3-4 minutes.
6. Flip the sandwich carefully and cook for another 3-4 minutes until the other side is also golden and the cheese is fully melted.
7. Once done, remove from the skillet, sprinkle with the remaining parsley, slice, and serve warm.
Notes:
- You can add a pinch of red pepper flakes for an extra kick.
