Ingredients:
4 chicken thighs (boneless, skinless)
2 cups rotini pasta
2 tbsp olive oil
1 tbsp butter
1 tsp garlic powder
1 tsp onion powder
1 tsp dried parsley (or fresh)
1 tsp paprika
Salt & pepper to taste
1 cup shredded cheddar cheese
1/2 cup mozzarella cheese
1 1/2 cups heavy cream (or half & half)
1/2 cup chicken broth
Instructions:
Cook pasta: Boil rotini pasta until al dente, drain, and set aside.
Prepare chicken: Season chicken with garlic powder, onion powder, paprika, parsley, salt, and pepper.
Cook chicken: In a skillet, heat olive oil and butter. Pan-sear chicken until golden and cooked through. Remove and set aside.
Make sauce: In the same skillet, pour in chicken broth and heavy cream. Stir in cheddar and mozzarella until melted and creamy.
Combine: Toss in the cooked pasta until fully coated with the cheese sauce.
Serve: Plate pasta with golden seared chicken on top. Garnish with parsley.
