🥕 Vegetable Soup
Ingredients:
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 zucchini, diced
- 1 can of diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup pasta of your choice
Directions:
1. In a large pot, sauté the onion, carrots, and celery until softened.
2. Add the zucchini, diced tomatoes, vegetable broth, oregano, salt, and pepper. Bring to a boil.
3. Reduce heat and let simmer for 20 minutes.
4. Add the pasta and cook until al dente.
5. Serve hot and enjoy!
