🍪 Easy Brownie Mix Cookies 🍫
Ingredients
1 (19.8 oz) box brownie mix (plus ingredients listed on box not needed—use only the dry mix)
¼ cup all-purpose flour
¼ cup neutral vegetable oil (such as canola or sunflower)
2 large eggs
3 tablespoons water
1 cup semisweet chocolate chips
Instructions
Prep: Preheat your oven to 350°F (175°C). Lightly grease a baking sheet or line it with parchment paper.
Mix Dough: In a large mixing bowl, combine the dry brownie mix, flour, oil, eggs, and water. Stir with a spatula or wooden spoon until a thick, uniform dough forms—about 1–2 minutes. Fold in the chocolate chips until evenly distributed.
Portion: Drop rounded tablespoon-sized scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for slight spreading.
Bake: Place in the center rack and bake for 8–10 minutes. The cookies are done when the edges look set and slightly firm, but the centers still appear soft (they’ll continue to firm up as they cool).
Cool: Let the cookies rest on the baking sheet for 3–5 minutes before transferring them to a wire rack to cool completely.
