Instant Pot Chicken and Dumplings
Ingredients:
- 1 lb boneless, skinless chicken breasts
- 1 onion, diced
- 3 carrots, sliced
- 3 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp thyme
- 1 tsp rosemary
- 1 cup frozen peas
- 2 cups biscuit dough, cut into small pieces
- Salt and pepper, to taste
Instructions:
1. Place chicken breasts, onion, carrots, celery, garlic, chicken broth, thyme, and rosemary in the Instant Pot.
2. Close the lid and set the Instant Pot to high pressure for 8 minutes.
3. Once done, do a quick release and remove the chicken from the pot.
4. Shred the chicken and return it to the pot, along with the frozen peas.
5. Add the biscuit dough pieces on top of the chicken mixture.
6. Close the lid and set the Instant Pot to high pressure for 5 minutes.
7. Once done, do a quick release and stir well to combine the dumplings with the chicken mixture.
8. Season with salt and pepper to taste.
9. Serve hot and enjoy!
