Brown Butter Pecan Oatmeal Cookies 🍪
Ingredients:
- 1 cup unsalted butter
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups rolled oats
- 1 cup chopped pecans
Instructions:
1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
2. In a saucepan over medium heat, melt the butter, stirring frequently until it turns golden brown and smells nutty. Remove from heat and let it cool slightly.
3. In a large bowl, combine the brown sugar and granulated sugar. Pour in the brown butter and mix until well combined.
4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
5. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
6. Fold in the rolled oats and chopped pecans until evenly distributed.
7. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
8. Bake for 10-12 minutes.
