Apple Cinnamon Oatmeal Cookies
Ingredients:
- 2/3 cup (160g) unsweetened applesauce
- 2 cups (170g) old-fashioned whole rolled oats
- 1 and 1/4 cups (156g) all-purpose flour (spooned & leveled)
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/4 teaspoon ground nutmeg
- 1/2 cup (113g) unsalted butter, softened to room temperature
- 1/2 cup (100g) granulated sugar
- 1/2 cup (100g) light or dark brown sugar (I use dark)
- 1 egg yolk, at room temperature
- 1 teaspoon pure vanilla extract
- 3/4 cup (90g) finely diced apples
- 1/2 cup (63g) chopped walnuts (optional)
Maple Icing:
- 2 tablespoons (28g) unsalted butter
- 1/3 cup (80ml) pure maple syrup
- 1 cup (112g) sifted confectioners’ sugar
- Pinch of salt, to taste
Directions:
1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
2. In a medium bowl, whisk together oats, flour, baking soda, salt, cinnamon, allspice, and nutmeg.
3. In a large bowl, using a hand mixer or stand mixer, beat the softened butter with granulated sugar and brown sugar until creamy and light, about 2-3 minutes.
4. Add the egg yolk and vanilla extract to the butter-sugar mixture and beat until combined.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Fold in the applesauce, diced apples, and walnuts (if using) until evenly distributed.
7. Using a spoon or cookie scoop, drop dough by rounded tablespoons onto the prepared baking sheets, spacing about 2 inches apart.
8. Bake for 12-15 minutes or until the edges are golden and the centers are set.
9. Remove from oven and allow cookies to cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
10. For the maple icing, melt butter in a small saucepan over low heat.
11. Remove from heat and whisk in maple syrup, confectioners’ sugar, and a pinch of salt until smooth.
12. Drizzle the maple icing over cooled cookies and allow to set before serving.
