Creamy Garlic Butter Salmon Pasta 🍣🍝

Ingredients:

- 2 salmon fillets, cut into chunks
- 1 cup heavy cream
- 8 oz fettuccine pasta
- 2 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1 tbsp lemon juice
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp red pepper flakes (optional)
- Fresh parsley, chopped for garnish

Instructions:

1. Cook the Pasta:
Bring a large pot of salted water to a boil. Add fettuccine pasta and cook according to package instructions until al dente. Drain the pasta and set aside.

2. Sear the Salmon:
While the pasta cooks, season the salmon chunks with salt and black pepper. In a large skillet, heat the olive oil over medium-high heat. Once hot, carefully add the salmon to the skillet and sear for about 2-3 minutes on each side, or until golden brown and just cooked through. Remove the salmon from the skillet and set it aside.

3. Make the Garlic Butter Sauce:
In the same skillet, reduce the heat to medium, and add the butter. Once melted, add the minced garlic and sauté for approximately 1 minute, or until fragrant. Pour in the heavy cream and lemon juice, stirring to combine. If you like a bit of heat, add in the red pepper flakes at this stage. Let the sauce simmer gently for 3-4 minutes to thicken slightly.

4. Finish the Sauce:
Stir in the grated Parmesan cheese into the garlic butter sauce, stirring continuously until melted and creamy. Taste the sauce and adjust seasoning with salt and black pepper as needed.

5. Combine & Serve:
Add the cooked fettuccine pasta to the skillet, tossing it gently in the creamy sauce until the pasta is evenly coated. Serve the pasta on plates, topping each portion with the seared salmon chunks. Drizzle any remaining sauce over the salmon and garnish with freshly chopped parsley before serving hot.
