Grab-and-Go Breakfast Bars: Oats, Quinoa, Maple Goodness 🌱✨

ingredients:
1/2 cup (100g) uncooked quinoa rinsed
1 cup (240ml) water
1 cup (100g) rolled oats gluten-free if needed
1/2 cup (60g) almond flour or oat flour
1/4 cup (30g) chopped nuts such as walnuts or pecans optional
1/4 cup (30g) seeds such as chia seeds or flaxseeds optional
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup (120ml) maple syrup
1/4 cup (60ml) melted coconut oil or other vegetable oil
1 teaspoon vanilla extract

directions:
1 Preheat your oven to 350°F (175°C). Grease and line an 8x8 inch (20x20 cm) baking pan with parchment paper, leaving an overhang on the sides.
2 Cook the quinoa: Combine rinsed quinoa and water in a small saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until water is absorbed. Let it sit covered for 5 minutes, then fluff with a fork.
3 In a large bowl, combine the cooked quinoa, rolled oats, almond flour, chopped nuts (if using), seeds (if using), cinnamon, and salt. Stir to combine.
4 In a separate small bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract.
5 Pour the wet ingredients into the dry ingredients and stir until everything is thoroughly combined and the mixture is sticky.
6 Spoon the mixture into the prepared baking pan and press it down firmly and evenly with the back of a spoon or a spatula.
7 Bake for 25-30 minutes, or until the edges are golden brown and the center is set.
8 Let the bars cool completely in the pan on a wire rack before lifting out the parchment paper and cutting into 12 squares or bars.
