Strawberry Rhubarb Pie 🍓🥧
Ingredients:
- 1 ½ cups fresh strawberries, hulled and sliced
- 1 ½ cups rhubarb, chopped into 1-inch pieces
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon unsalted butter, cut into small pieces
- 1 package refrigerated pie crusts (or homemade if preferred)
- 1 egg, beaten (for egg wash)
- Extra sugar for sprinkling on top
Instructions:
1. Prepare the Filling:
- In a large mixing bowl, combine the sliced strawberries, chopped rhubarb, granulated sugar, flour, cinnamon, and lemon juice.
- Gently toss until the fruit is evenly coated. Set aside to let the juices mix for about 15 minutes.
2. Preheat the Oven:
- Preheat your oven to 425°F (220°C).
3. Prepare the Pie Crust:
- Roll out one pie crust and fit it into a 9-inch pie pan.
- Trim any excess crust hanging over the edges.
4. Fill the Pie:
- Pour the strawberry-rhubarb mixture into the prepared pie crust, spreading it evenly.
