SMOKY CHIPOTLE CREAM PASTA WITH JUICY STEAK BITES
Ingredients:
1 lb steak (sirloin or ribeye), cut into bite-sized pieces
2 tbsp olive oil
2 tbsp chipotle seasoning
Salt and pepper to taste
3 cloves garlic, minced
1 cup heavy cream
1/2 cup beef broth
1/2 cup grated Parmesan cheese
1/4 cup shredded cheddar cheese
12 oz pasta (penne or rigatoni)
1 tsp smoked paprika
1/2 tsp chili powder
1 tbsp fresh lime juice
Fresh cilantro, chopped (for garnish)
Directions:
1. Cook the Steak Bites: Heat olive oil in a large skillet over medium-high heat. Season the steak with chipotle seasoning, salt, and pepper. Add the steak bites to the skillet and cook for 5-6 minutes, until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.
2. Prepare the Pasta: In a separate pot, cook the pasta according to package instructions. Once cooked, drain and set aside.
3. Make the Smoky Chipotle Cream Sauce: In the same skillet, add the minced garlic and cook for 1-2 minutes until fragrant. Pour in the heavy cream and beef broth, stirring to combine. Let it simmer for 2-3 minutes, then add the Parmesan and cheddar cheeses. Stir until the cheeses are melted and the sauce becomes creamy and smooth. Season with smoked paprika, chili powder, and a squeeze of fresh lime juice for extra flavor.
4. Combine Steak and Pasta: Add the cooked pasta to the skillet with the chipotle cream sauce and toss to coat. Then, return the steak bites to the skillet and gently toss everything together until well mixed.
