Steak with Creamy Mushroom Sauce & Asparagus

Ingredients:

For the Steak:

2 ribeye or sirloin steaks (about 1-inch thick)
1 tbsp olive oil
1 tbsp unsalted butter
2 cloves garlic, smashed
1 tsp salt
½ tsp black pepper
½ tsp smoked paprika (optional)

For the Creamy Mushroom Sauce:

1 tbsp unsalted butter
1 tbsp olive oil
1 cup cremini or button mushrooms, sliced
1 small shallot, finely chopped
2 cloves garlic, minced
½ cup heavy cream
¼ cup beef broth
½ tsp Dijon mustard
½ tsp Worcestershire sauce
¼ tsp salt
¼ tsp black pepper
1 tbsp fresh parsley, chopped

For the Asparagus:

1 bunch asparagus, trimmed
1 tbsp olive oil
½ tsp salt
¼ tsp black pepper
Juice of ½ lemon

Directions:

Prepare the Steak:
Pat the steaks dry with paper towels and season both sides with salt, black pepper, and smoked paprika. Heat a cast-iron skillet over medium-high heat. Add olive oil and butter, then place the steaks in the pan. Sear for 3-4 minutes per side for medium-rare, or longer for your desired doneness. Add the smashed garlic during the last minute and baste the steaks with melted butter. Remove the steaks from the skillet and let them rest for 5 minutes.

Prepare the Creamy Mushroom Sauce:
In the same skillet, reduce heat to medium and add butter and olive oil. Sauté the sliced mushrooms for 3-4 minutes until softened. Add shallots and garlic, cooking for another minute. Pour in beef broth and let it simmer for 2 minutes. Stir in heavy cream, Dijon mustard, Worcestershire sauce, salt, and pepper. Let the sauce thicken slightly for 2-3 minutes. Stir in fresh parsley and remove from heat.

Prepare the Asparagus:
In a separate pan, heat olive oil over medium heat. Add the trimmed asparagus and season with salt and black pepper. Sauté for 3-4 minutes until tender-crisp. Squeeze fresh lemon juice over the asparagus before serving.

Assemble & Serve:
Place the rested steak on a plate and spoon the creamy mushroom sauce over the top. Serve with the sautéed asparagus on the side. Enjoy this rich and flavorful dish with a glass of red wine or a side of mashed potatoes!
