Grilled Halibut with Lemon Butter Pasta
Zesty Grilled Halibut over Creamy Lemon Herb Pasta
Ingredients:
For the Halibut:
2 halibut fillets
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper, to taste
Juice of 1/2 lemon
For the Lemon Butter Pasta:
200g (7 oz) spaghetti or linguine
2 tablespoons unsalted butter
2 tablespoons olive oil
2 garlic cloves, minced
Zest and juice of 1 lemon
1/4 cup fresh parsley, chopped
1/4 cup grated Parmesan cheese (optional)
Salt and pepper, to taste
Directions:
Preheat a grill pan or outdoor grill to medium-high heat.
Brush halibut fillets with olive oil, then season with garlic powder, paprika, salt, pepper, and lemon juice.
Grill the halibut for about 4–5 minutes per side, or until the fish is opaque and flakes easily with a fork. Remove and set aside.
Cook the pasta in salted boiling water according to package instructions. Drain and reserve 1/4 cup of the pasta water.
In a large skillet, heat butter and olive oil over medium heat. Add garlic and cook for 1 minute until fragrant.
Add lemon zest, lemon juice, and a splash of reserved pasta water. Stir to combine.
Toss in cooked pasta, season with salt and pepper, then stir in parsley and Parmesan (if using).
Serve the grilled halibut on top of the lemon butter pasta and garnish with extra parsley and lemon wedges.
