Moist Vanilla Loaf Cake
Ingredients:
2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter (softened)
1/2 cup milk
3 large eggs
1 tablespoon vanilla extract
2 teaspoons baking powder
1/4 teaspoon salt
Instructions:
1. Preheat the oven: Set your oven to 350°F (175°C). Grease a loaf pan (8x4 inches) or line it with parchment paper.
2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
3. Cream butter and sugar: In a large mixing bowl, beat the softened butter and sugar together with an electric mixer on medium speed until light and fluffy (about 3-4 minutes).
4. Add eggs and vanilla: Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
5. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Start and end with the dry ingredients. Mix until just combined. Be careful not to overmix.
6. Bake: Pour the batter into the prepared loaf pan and spread it evenly. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
7. Cool: Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
