Ingredients:
1 tablespoon (15ml) coconut oil or olive oil
1 large onion (about 200g), chopped
2 cloves garlic, minced
1 tablespoon (15g) fresh ginger, grated
4 cups (about 500g) carrots, peeled and chopped
1 cup (about 200g) red lentils, rinsed
6 cups (1.5 liters) vegetable broth
1 teaspoon (5g) ground cumin
1/2 teaspoon (2.5g) ground coriander
1/4 teaspoon (1g) cayenne pepper (optional, for spice)
Salt and black pepper to taste
Coconut milk or yogurt for garnish (optional)
Fresh cilantro or parsley for garnish (optional)

Directions:
1 Heat the coconut oil or olive oil in a large pot or Dutch oven over medium heat.
2 Add the chopped onion and cook, stirring occasionally, until softened, about 5-7 minutes.
3 Add the minced garlic and grated ginger. Cook for 1 minute until fragrant.
4 Stir in the chopped carrots, rinsed red lentils, vegetable broth, cumin, coriander, and cayenne pepper (if using).
5 Bring the soup to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until the carrots are tender and the lentils have broken down.
6 Season with salt and black pepper to taste.
7 Use an immersion blender to partially or fully blend the soup to your desired smooth consistency.
8 Ladle into bowls and garnish with a swirl of coconut milk or yogurt and fresh cilantro or parsley if desired.
