Zesty Lemon Meltaway Cookies
Ingredients:
1 cup unsalted butter, softened
3/4 cup powdered sugar
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup cornstarch
For the Lemon Glaze:
1 cup powdered sugar
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
Directions:
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, cream together the butter and powdered sugar until light and fluffy.
Mix in the lemon zest, lemon juice, and vanilla extract.
In a separate bowl, whisk together the flour, salt, and cornstarch.
Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
Scoop 1-inch balls of dough and place them on the prepared baking sheet. Slightly flatten each ball with your fingers.
Bake for 12-14 minutes, or until the edges are lightly golden. Let cool on a wire rack.
In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest to make the glaze.
Drizzle or dip each cooled cookie in the glaze and let it set before serving.
