Easy, crispy golden brown egg rolls bursting with delicious flavor in every bite!

Easy Chinese Egg Rolls

Yield: 6-8 egg rolls

Method: Stove Top

Ingredients:

1 lb ground pork
1 small onion, finely chopped
5 cups packaged cabbage/coleslaw mix
1 tablespoon oyster sauce
1 teaspoon ginger (from a tube, found in the produce section)
Salt and pepper, to taste
15 egg roll wraps
1 quart oil, for frying
3 cloves garlic, finely minced (or 1 teaspoon garlic powder)
2 eggs, scrambled and mashed (optional)

Instructions:

Sauté the Onion:
In a small amount of oil, sauté the finely chopped onion until tender.
Brown the Pork:
Add the ground pork to the sautéed onions and cook until browned and thoroughly cooked.
Add Flavor:
Add the minced garlic (or garlic powder), ginger, salt, and pepper. Mix well to combine the flavors.
Add the oyster sauce and mix again.
Add the Cabbage:
Add the cabbage/coleslaw mix to the pork mixture.
Cook the Filling:
Cook for approximately 3-5 minutes, depending on your preferred level of crispness in the cabbage.
Fill the Egg Rolls:
Lay an egg roll wrap on a clean surface with a corner facing you.
Place about 2 tablespoons of the filling in the center of the wrap.
Roll the Egg Rolls:
Wet the edges of the egg roll wrapper with water.
Roll the corner closest to you over the filling one rotation.
Fold in the sides of the wrap.
continue rolling the wrap to the opposite corner.
Ensure that the wet edges are sealed tightly.
Seal the Egg Rolls:
Make sure all openings are well sealed to prevent greasy egg rolls.

Fry the Egg Rolls:
Heat the oil to 350-360°F (175-182°C).1

Note: Maintaining the correct oil temperature is crucial to prevent greasy egg rolls.
Carefully deep-fry 1-3 egg rolls at a time until they are light brown.
They will darken slightly after being removed from the oil.
Drain the fried egg rolls on paper towels.
Serve with Sauce:
Serve the egg rolls with store-bought duck sauce, or make your own:
Combine apricot jam, a small amount of light corn syrup, and water to achieve the desired consistency.
For added flavor, consider adding a small amount of ginger to your homemade duck sauce.
Optional ingredient notes:

Adding the scrambled and mashed eggs into the meat and cabbage mix prior to filling the wrappers, is an optional ingredient, that some people find very delicious.
