Moist Pineapple Dream Cake
Ingredients
For the Cake:
2 ½ cups all-purpose flour
1 tbsp baking powder
½ tsp salt
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 cup crushed pineapple (with juice, not drained)
½ cup buttermilk
1 tsp vanilla extract
For the Pineapple Cream Cheese Frosting:
1 cup unsalted butter, softened
8 oz cream cheese, softened
4 cups powdered sugar
¼ cup pineapple juice
1 tsp vanilla extract
Instructions
1. Make the Cake
Preheat oven to 350°F (175°C). Grease and flour three 8-inch cake pans.
In a bowl, whisk together flour, baking powder, and salt.
In a large bowl, beat butter and sugar until light and fluffy (about 3 minutes).
Add eggs, one at a time, mixing well after each.
Stir in crushed pineapple, buttermilk, and vanilla extract until combined.
Gradually add the flour mixture, mixing just until incorporated.
Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
Let cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
2. Make the Frosting
Beat butter and cream cheese together until smooth and fluffy.
Gradually mix in powdered sugar, followed by pineapple juice and vanilla extract.
Beat until light and creamy.
3. Assemble the Cake
Place one cake layer on a serving plate and spread a layer of frosting on top.
Repeat with the second layer, then place the third layer on top.
Frost the entire cake, smoothing the sides and top.
Decorate with piped frosting swirls and a pineapple slice for a tropical touch! 🍍
