Ingredients
For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Cheesecake Filling:
16 oz cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1 cup sour cream
1 cup heavy cream
For the Cherry Topping:
1 can (15 oz) cherry pie filling
1 cup fresh or frozen cherries, pitted and halved (optional)
2 tablespoons granulated sugar (if using fresh cherries)
1 tablespoon lemon juice (if using fresh cherries)
For the Chocolate Ganache (Optional):
1/2 cup semi-sweet chocolate chips
1/4 cup heavy cream

1. Prepare the Crust:

In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until evenly combined.
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

2. Make the Cheesecake Filling:

Heat heavy cream in a small saucepan until it begins to simmer, then remove from heat.

Spread the cherry topping evenly over the chilled cheesecake.
