KETO CHOCOLATE EGG PUDDING RECIPE
Ingredients:
• 2 large eggs
• 1/4 cup unsweetened cocoa powder
• 2 tbsp. erythritol or your preferred sweetener
• 1 cup unsweetened almond milk
• 1 tsp. vanilla extract
• 1/4 tsp. salt
Instructions:
1. In a medium-sized mixing bowl, whisk the eggs until smooth.
2. Add in the cocoa powder, erythritol, almond milk, vanilla extract, and salt. Whisk until everything is well combined.
3. Pour the mixture into a saucepan and place over medium heat. Cook the mixture, stirring constantly, until it thickens and coats the back of a spoon. This should take about 5-7 minutes.
4. Remove the saucepan from heat and let the pudding cool down.
5. Serve the pudding in a bowl or pour into a mason jar. You can add a dollop of whipped cream or some keto-friendly chocolate chips if desired.
