***Balsamic Chicken Breast with Spinach and Tomatoes
Savory Balsamic Chicken with Fresh Spinach and Juicy Tomatoes
Ingredients:
4 boneless, skinless chicken breasts
2 tablespoons balsamic vinegar
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
Salt and pepper to taste
4 cups fresh spinach
1 cup cherry tomatoes, halved
1/4 cup grated Parmesan cheese (optional)
Directions:
Preheat your oven to 400°F (200°C).
In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, dried oregano, salt, and pepper.
Place the chicken breasts in a baking dish and pour the balsamic mixture over them, ensuring they are well coated.
Bake the chicken in the preheated oven for 20 minutes.
While the chicken is baking, heat a large skillet over medium heat. Add the fresh spinach and cherry tomatoes, cooking until the spinach is wilted and the tomatoes are slightly softened, about 3-4 minutes.
Once the chicken has baked for 20 minutes, remove it from the oven and add the sautéed spinach and tomatoes on top.
Return the dish to the oven and bake for an additional 10-15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
If desired, sprinkle grated Parmesan cheese over the top before serving.
