Ingredients:
1 box (15.25 oz) yellow cake mix
4 large eggs
1/2 cup vegetable oil
1 can (20 oz) crushed pineapple in juice, undrained
1 tub (8 oz) whipped topping, thawed
1 package (3.4 oz) instant vanilla pudding mix
1/2 cup crushed pineapple (drained, for frosting)
Instructions:
1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan; set it aside.
2. In a large bowl, mix together the cake mix, eggs, vegetable oil, and the entire can of crushed pineapple along with its juice until the mixture is smooth and well combined.
3. Pour the batter into the prepared baking pan and spread it evenly. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
4. Allow the cake to cool completely in the pan on a wire rack.
5. In a separate bowl, whisk together the instant pudding mix and thawed whipped topping until it’s smooth and slightly thickened. Gently fold in the additional drained crushed pineapple.
6. Once the cake has cooled, evenly spread the frosting over the top. Cover it and refrigerate for at least 1 hour to enhance its flavor and texture before serving.
