2 ribeye or sirloin steaks
2 tablespoons olive oil (divided)
2 cloves garlic, minced

2 large ripe tomatoes, sliced
1 small red onion, thinly sliced
1 tablespoon apple cider vinegar

4 large russet potatoes, cut into fries
1/2 teaspoon paprika (optional)

Instructions:

1. Prepare the French fries first. Preheat your oven to 425°F (220°C). Toss the cut russet potatoes in a bowl with 1 tablespoon of olive oil, salt, pepper, and paprika if using. Spread them out in a single layer on a baking sheet. Bake for about 30-35 minutes, turning halfway through, until they are golden brown and crispy.

2. While the fries are baking, prepare the tomato and onion salad. In a bowl, combine the sliced tomatoes and thinly sliced red onion. Drizzle with the remaining tablespoon of olive oil and apple cider vinegar. Season with salt and pepper and toss gently to combine. Set aside to let the flavors meld.

3. Now, focus on the grilled steaks. Bring them to room temperature for about 30 minutes before cooking. Season both sides of the steaks generously with salt, pepper, and the chopped rosemary or thyme.
