No Bake Thin Mint Cookie Truffles

Ingredients:

1 package (9 oz) Thin Mint cookies or chocolate mint sandwich cookies
4 oz cream cheese, softened
1 cup green candy melts (or white chocolate + green food coloring)
1/4 cup chopped dark chocolate or chocolate shavings (for topping)

Directions:

In a food processor, pulse Thin Mint cookies until they form fine crumbs.
Add softened cream cheese and blend until fully combined and the mixture resembles a thick dough.
Scoop and roll into 1-inch balls, then place on a parchment-lined baking sheet. Freeze for 20 minutes.
While the truffles chill, melt green candy melts according to package instructions (or melt white chocolate and stir in green coloring).
Dip each chilled truffle into the melted candy, coating evenly. Place back on the parchment paper.
Immediately sprinkle chopped dark chocolate or chocolate shavings over the top before the coating sets.

Refrigerate for 30 minutes until firm. Serve chilled or at room temperature.
