Amish Oatmeal Rhubarb Bars
Ingredients:
1 ½ cups rolled oats
1 cup all-purpose flour
1 cup brown sugar, packed
½ teaspoon baking soda
½ teaspoon salt
½ cup unsalted butter, melted
1 cup rhubarb, chopped
½ cup granulated sugar
1 tablespoon cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
Directions:
Preheat oven to 350°F (175°C) and grease an 8x8-inch baking dish.
In a large bowl, mix oats, flour, brown sugar, baking soda, and salt. Stir in melted butter until crumbly.
Press 2/3 of the oat mixture firmly into the bottom of the prepared pan to form the crust.
In a small saucepan, combine chopped rhubarb, granulated sugar, cornstarch, lemon juice, and vanilla.
Cook over medium heat, stirring constantly, until the mixture thickens and rhubarb softens (about 5-7 minutes).
Spread the rhubarb mixture evenly over the oat crust.
Sprinkle the remaining oat mixture over the top, pressing gently.
Bake for 30-35 minutes, or until golden brown on top.
Allow to cool completely before cutting into bars.
