Creamy Spinach Turkey Pasta Bake
Baked Penne with Ground Turkey, Spinach, and Creamy Herb Sauce
Ingredients:
12 oz penne pasta
1 lb lean ground turkey
2 tbsp olive oil
1 small yellow onion, finely chopped
3 garlic cloves, minced
4 cups fresh spinach, chopped
1 cup plain Greek yogurt
1 cup low-fat milk
1/2 cup low-fat cream cheese
1/2 cup grated Parmesan cheese
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp ground black pepper
Salt to taste
1/2 cup shredded mozzarella cheese (optional topping)
Directions:
Preheat your oven to 375°F (190°C).
Cook the penne pasta according to package directions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sauté for 2–3 minutes until fragrant.
Add the ground turkey, season with salt and pepper, and cook until browned and cooked through, breaking it apart with a spoon.
Stir in chopped spinach and cook for another 2–3 minutes until wilted.
Lower the heat and add Greek yogurt, milk, cream cheese, Parmesan, basil, and oregano. Stir until the sauce becomes creamy and well-combined.
Add the cooked pasta to the skillet and stir until the pasta is evenly coated.
Transfer everything to a greased 9x13 inch baking dish. Top with shredded mozzarella if using.
Bake uncovered for 20–25 minutes or until bubbling and slightly golden on top.
