Sticky Sweet Chili Glazed Chicken with Garlicky Broccoli and Penne

Ingredients:

12 oz (340 g) penne pasta

1 tablespoon olive oil

2 boneless, skinless chicken breasts, diced

2 cups broccoli florets

3 garlic cloves, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon smoked paprika

1/4 teaspoon crushed red pepper flakes (optional)

1/2 cup sweet chili sauce

1 tablespoon low-sodium soy sauce

1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

Juice of 1/2 lime

Fresh cilantro or green onions for garnish

Directions:

Cook the penne pasta according to package instructions. Drain and set aside.

In a large pan, heat olive oil over medium-high heat. Add diced chicken, season with salt, pepper, paprika, and cook for 5-7 minutes until golden and cooked through.

Add garlic and cook for 30 seconds, then stir in broccoli florets. Cook for 3-4 minutes until broccoli is tender-crisp.

Pour in the sweet chili sauce, soy sauce, and lime juice. Stir to coat the chicken and broccoli evenly.

For a thicker glaze, stir in the cornstarch slurry and cook for 1-2 minutes until the sauce thickens.

Add the cooked pasta to the skillet and toss everything together until well combined and heated through.

Garnish with chopped cilantro or green onions and serve hot.
