Ingredients:
For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
6 tablespoons unsalted butter, melted
For the Lemon Curd Layer:
1 cup fresh lemon juice
2 teaspoons lemon zest
1 cup granulated sugar
4 large eggs
1/2 cup unsalted butter, cubed
For the Cream Cheese Layer:
4 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
4 large eggs
1/4 cup sour cream
Directions:
For the Crust:
Mix graham cracker crumbs, 1/4 cup sugar, and melted butter until well blended.
Press mixture into the bottom of a greased 9x13 inch pan.
Bake at 325°F (163°C) for 10 minutes, then cool slightly.
For the Lemon Curd Layer:
Whisk together lemon juice, lemon zest, 1 cup sugar, and eggs in a saucepan over medium heat.
Add butter and cook, stirring constantly until the mixture thickens and coats the back of a spoon, about 5-7 minutes.
Strain through a fine mesh to remove zest pieces, then cool to room temperature.
For the Cream Cheese Layer:
Beat the cream cheese with 1 cup sugar and vanilla until smooth.
Add eggs, one at a time, beating just until blended after each addition.
Stir in sour cream, then pour over the prepared crust.
Assembly:
Spoon lemon curd over the cream cheese layer and use a or toothpick to gently swirl.
Bake at 325°F (163°C) for about 35-40 minutes or until set.
Cool to room temperature, then chill in the refrigerator for at least 4 hours before cutting into squares.
