Chili Lime Shrimp with Zesty Penne
Spicy Chili Lime Shrimp Pasta Delight
Ingredients:
1 lb (450g) large shrimp, peeled and deveined
8 oz (225g) penne pasta
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon cumin
Zest of 1 lime
Juice of 1 lime
1/4 teaspoon red pepper flakes (optional for extra spice)
1/4 cup fresh cilantro, chopped
Salt and pepper, to taste
Directions:
Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions. Drain and set aside.
In a large bowl, toss the shrimp with chili powder, paprika, cumin, lime zest, salt, and pepper.
Heat olive oil in a large skillet over medium-high heat. Add garlic and sauté for about 30 seconds until fragrant.
Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side or until pink and cooked through.
Reduce heat to low. Add the drained penne pasta to the skillet along with lime juice and toss everything together to coat well.
Sprinkle with chopped cilantro before serving. Add a pinch of red pepper flakes if you like it extra spicy!
