Speculoos Cake:
🧈 Cooking spray
🥣 2 cups (240 g) all-purpose flour
🌿 1 1/2 tsp ground cinnamon
🧂 3/4 tsp baking soda
🧂 1/2 tsp kosher salt
🌿 1/4 tsp ground anise
🌿 1/4 tsp ground cardamom
🌿 1/4 tsp ground ginger
🌿 1/4 tsp ground nutmeg
🍂 1 cup (215 g) packed brown sugar
🧈 1/2 cup (1 stick) unsalted butter, softened
🥚 2 large eggs
🍦 1 tsp pure vanilla extract
🥛 1 cup buttermilk, divided
Cookie Butter Mousse:
🍪 14 oz. (1 jar) Biscoff cookie butter
🧀 12 oz. cream cheese, softened
🧂 Pinch of kosher salt
🥛 3/4 cup heavy cream
Whipped Cream:
🥛 3 cups heavy cream
🍬 3 Tbsp confectioners' sugar
🍦 1 1/2 tsp pure vanilla extract
Assembly:
🍪 1 package Biscoff cookies (16 cookies)
🍮 1/2 cup caramel sauce (store-bought or homemade)
🍬 Confectioners' sugar, for dusting
Directions:
To Make the Cake:
Prep and Mix: Preheat oven to 350°F (175°C). Grease an 8" cake pan with cooking spray. In a bowl, whisk together flour, cinnamon, baking soda, salt, anise, cardamom, ginger, and nutmeg.
Cream and Blend: In a large bowl, beat the brown sugar and butter until fluffy, about 3-5 minutes. Add eggs one at a time, then mix in vanilla.
Combine and Bake: Gradually mix in half the dry ingredients, then half the buttermilk. Repeat with the rest, mixing until just combined. Pour batter into the pan. Bake for 50-55 minutes or until a tester comes out clean. Cool completely, then slice horizontally into two layers.
To Make the Cookie Butter Mousse:
Mix and Fluff: Beat cookie butter, cream cheese, and a pinch of salt until light and fluffy, about 3-5 minutes. Slowly add heavy cream while beating until well combined.
To Make the Whipped Cream:
Whisk to Peaks: Beat heavy cream, confectioners' sugar, and vanilla until soft peaks form, about 3 minutes.
To Assemble the Trifle:
Layer and Build: Trim cake layers to fit your trifle dish. Spread a layer of whipped cream in the bottom of the dish, then add one cake layer. Top with half of the mousse.
Arrange Cookies: Stand Biscoff cookies upright along the dish's edge. Fill the center with more whipped cream, guiding it between cookies. Drizzle with caramel sauce.
Repeat and Finish: Place the second cake layer on top, add the remaining mousse, then top with more whipped cream. Cover and chill for at least 3 hours or overnight.
Decorate and Serve: Before serving, drizzle with extra caramel sauce, add a couple of cookies for garnish, and dust with confectioners' sugar.
