Mac and Cheese Meatloaf Casserole
Ingredients:
For the Meatloaf Base:
1 ½ lbs ground beef
1 egg
1/2 cup breadcrumbs
1/3 cup milk
1 small onion, finely chopped
2 cloves garlic, minced
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
For the Mac and Cheese Layer:
2 cups elbow macaroni, cooked al dente
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
2 cups shredded sharp cheddar cheese
1/2 teaspoon mustard powder (optional)
Salt and pepper to taste
Optional Garnish:
Fresh parsley, chopped
Extra shredded cheese for topping
Directions:
Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish.
In a large bowl, combine all meatloaf ingredients and mix until well blended.
Press the meat mixture evenly into the bottom of the prepared casserole dish. Bake for 20-25 minutes.
While the meatloaf bakes, prepare the mac and cheese. In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Gradually whisk in the milk and cook until thickened.
Stir in the cheese and mustard powder until melted and smooth. Season with salt and pepper. Add cooked macaroni and stir to coat.
Remove meatloaf from the oven, drain any excess fat, and spoon the mac and cheese evenly over the top.
Sprinkle with extra cheese if desired and return to oven for 10–15 minutes, until bubbly and slightly golden on top.
Garnish with parsley and let cool slightly before serving.
