Grilled Lamb Hearts with Mint Pistou 🐑🌿❤️

Ingredients:
1 lb lamb hearts, trimmed of excess fat and membranes
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/4 tsp red pepper flakes (optional)
For the Mint Pistou:
2 cups fresh mint leaves
1/2 cup grated Parmesan cheese
1/4 cup pine nuts
2 cloves garlic
1/2 cup olive oil
Salt and pepper to taste
Instructions:
1. Prepare the Lamb Hearts: Pat the lamb hearts dry with paper towels. In a bowl, combine olive oil, salt, pepper, and red pepper flakes (if using). Add the lamb hearts and toss to coat evenly. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
2. Grill the Lamb Hearts: Preheat your grill to medium-high heat. Grill the lamb hearts for 3-4 minutes per side, or until they are cooked through and slightly charred. The internal temperature should reach 160°F (71°C). Remove from grill and let rest for 5 minutes before slicing.
3. Make the Mint Pistou: While the lamb hearts are grilling, prepare the pistou. Combine the mint leaves, Parmesan cheese, pine nuts, and garlic in a food processor. Pulse until finely chopped. With the motor running, slowly drizzle in the olive oil until a smooth paste forms. Season with salt and pepper to taste.
4. Serve: Slice the rested lamb hearts and arrange them on a platter. Spoon the mint pistou generously over the lamb hearts. Serve immediately and enjoy!
