COMFORTING CHICKEN SOUP

This Chicken Soup is flavoured with leeks, onions, a mix of veggies, coconut milk, tender chicken and flavourful spices. It's packed with nutrients and perfect for a family dinner. Your family will love it!
RECIPE - Serves 5-6
Ingredients π
1/4 Cup Olive Oil
800g/1.7lbs Chicken Breast, halved
1 Medium Onion, diced
1 Large Leek, sliced
4 Carrots, sliced
2 Large Potatoes, chopped
2 Stalks Celery, sliced
3 Cloves Garlic, chopped
1 Tsp Grated Ginger or Paste
250g/8.8oz Orzo Pasta
250g/8.8oz Frozen Peas
1 Tsp Turmeric
1 1/2 Tsp Chicken Seasoning
1/2 Tsp Salt
6 Cups Chicken Stock
1 (400g/14oz) Can Coconut Milk
1/4 Cup Chopped Parsley
Salt & Pepper
Method:
Heat olive oil over medium heat in a large soup pot.
Add onions, leeks, carrots, celery, potatoes and 1/2 teaspoon salt and sautΓ©, stirring occasionally, until onions and leeks start to soften.
Add chopped garlic, ginger, turmeric and chicken seasoning and continue to sautΓ© for another 2-3 minutes, stirring frequently.
Add chicken stock or broth, coconut milk and raw chicken. Cover and simmer until chicken is cooked through and veggies are tender - about 20 minutes. Do not boil the soup too vigorously to prevent the coconut milk from splitting.
Remove chicken from pot onto a cutting board to cool slightly. Cut into bite sized pieces.
Meanwhile add the pasta, peas and parsley to the pot. Add the chicken and continue to simmer until pasta is cooked.
Season with salt and pepper to taste and serve.
