🍪 Healthy Oat Cookies with Dried Fruit & Nuts 🌰

Ingredients
Dry Base
1½ cups rolled oats 🌾
½ cup raw almonds, chopped
½ cup raw cashews 🥜
⅓ cup pumpkin seeds (pepitas)
¼ cup sunflower seeds
2 tbsp sesame seeds
½ tsp ground cinnamon
Dried Fruits
½ cup dried cranberries 🍒
¼ cup golden raisins
¼ cup chopped dried apricots
Wet Binding Mix
⅓ cup honey or maple syrup 🍯
2 tbsp coconut oil, melted
1 tsp vanilla extract
Instructions
🔥 Preheat the Oven
Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
🥣 Mix the Dry Ingredients
In a large bowl, combine oats, nuts, seeds, cinnamon, and all chopped dried fruits.
🍯 Add the Wet Ingredients
In a small bowl, whisk together honey (or syrup), melted coconut oil, and vanilla extract. Pour over the oat mixture and stir until everything is evenly coated.
🥄 Shape the Cookies
Scoop about 2 tablespoons of the mixture per cookie and press firmly into round shapes with your hands or a ring mold. Flatten slightly—they won’t spread much during baking.
🔄 Bake Until Golden
Bake for 16–18 minutes until edges are golden and firm. Let cool on the pan for 10 minutes, then transfer to a wire rack to cool completely.

Store in an airtight container at room temperature for up to 5 days, or freeze for longer freshness.
