Shrimp-Stuffed Salmon with Garlic Mashed Potatoes & Roasted Asparagus 🦐🐟
Decadent, creamy, and protein-packed—an elegant dinner masterpiece!

📝 Ingredients:

For the Shrimp-Stuffed Salmon:

2 salmon fillets, skin removed

1/2 lb shrimp, peeled & deveined

4 oz cream cheese, softened

1/4 cup shredded mozzarella

1 tbsp Parmesan cheese

1/4 cup chopped spinach

1 clove garlic, minced

1 tsp Old Bay or Cajun seasoning

1 tbsp olive oil

Salt & black pepper to taste

For the Garlic Mashed Potatoes:

3 large potatoes, peeled & cubed

3 tbsp butter

1/2 cup milk or cream

2 garlic cloves, minced or roasted

Salt & pepper to taste

For the Roasted Asparagus:

1 bunch of asparagus, trimmed

1 tbsp olive oil

Salt, pepper, and garlic powder to taste

🍽️ Directions:

1️⃣ Prepare the Mashed Potatoes:

Boil potatoes in salted water until fork-tender.

Drain and mash with butter, milk, garlic, salt, and pepper. Set aside.

2️⃣ Make the Shrimp Filling:

In a bowl, mix softened cream cheese, mozzarella, Parmesan, spinach, garlic, and half of the chopped shrimp (raw or pre-cooked).

Season with a bit of Old Bay/Cajun seasoning, salt, and pepper.

3️⃣ Stuff the Salmon:

Cut a pocket into the thickest part of each salmon fillet.

Stuff generously with the shrimp filling.

Season the outside of the salmon with remaining seasoning.

4️⃣ Cook the Salmon:

Heat olive oil in a skillet over medium heat.

Sear stuffed salmon for 3–4 minutes per side or until golden.

Optionally, finish in a preheated oven at 375°F (190°C) for 5–7 minutes.

5️⃣ Roast the Asparagus:

Toss asparagus with olive oil, salt, pepper, and garlic powder.

Roast at 400°F (205°C) for 12–15 minutes until tender and lightly crisp.

6️⃣ Assemble & Serve:

Plate mashed potatoes first, top with the stuffed salmon, and add a side of roasted asparagus.

Spoon a little butter or pan juices over the top if desired.
