Valentine Strawberry Cookies
Ingredients:
1 box (15.25 oz) strawberry cake mix
1/3 cup vegetable oil
2 large eggs
1/2 cup white chocolate chips (optional)
Pink, red, and white heart-shaped sprinkles (for decoration)
1/4 cup melted white chocolate (for drizzling)
Directions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the strawberry cake mix, vegetable oil, and eggs. Stir until a smooth dough forms. Fold in the white chocolate chips if desired.
Scoop tablespoons of dough and roll into balls. Place them on the prepared baking sheet, leaving about 2 inches of space between each cookie.
Flatten slightly with your hand or a spatula.
Bake for 8-10 minutes or until the edges are set. The centers may look slightly soft—this ensures a chewy texture.
Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Drizzle melted white chocolate over the cookies and decorate with heart-shaped sprinkles while the chocolate is still warm. Allow the chocolate to set before serving.
