Watermelon Sorbet
Ingredients:
4 cups diced seedless watermelon
1/2 cup granulated sugar
2 tablespoons lime juice
1/4 cup water
Pinch of salt
Directions:
In a blender, puree the diced watermelon until smooth.
In a small saucepan, combine sugar, water, and salt. Heat over low heat, stirring until the sugar dissolves completely. Remove from heat and let cool.
Stir the lime juice and sugar syrup into the watermelon puree.
Pour the mixture into a shallow dish and freeze for 3-4 hours, stirring every 30 minutes to break up ice crystals.
(Or churn in an ice cream maker according to the manufacturer’s instructions.)
Scoop and serve once fully frozen.

Tips:
