A towering treat of cool, creamy indulgence! This frozen delight layers a chocolate biscuit base with vanilla ice cream loaded with cookie dough and chocolate chips, finished with rich fudge sauce and decorative toppings. Itβs a real showstopper!
Ingredients:
For the base:
π« Chocolate biscuits (e.g. Bourbons or digestives): 250g, crushed
π§ Unsalted butter: 100g, melted
For the filling:
π¦ Good-quality vanilla ice cream: 1 litre, slightly softened
πͺ Ready-to-eat cookie dough: 200g, chopped into chunks
π« Dark chocolate chips: 100g
For topping (optional but brilliant):
π« Chocolate sauce or fudge topping: 100ml
πͺ Extra cookie dough balls: a few for garnish
π« Chocolate shards or chunks: to decorate
π« Extra chocolate chips: to finish
Method:
π₯£ Mix crushed biscuits with melted butter. Press firmly into the base of a 20cm springform tin and freeze for 15 minutes.
π¦ In a bowl, stir together the softened ice cream, cookie dough, and chocolate chips.
π¦ Spoon onto the chilled base, level the top, and freeze for at least 4 hours or overnight until solid.
